In our commitment to sustainability, we focus on using local and seasonal ingredients. We work closely with local farmers, organic producers, and suppliers from the regions of Madrid and Castile, allowing us to offer fresh, high-quality food with a lower carbon footprint. Our menu changes seasonally, respecting the natural rhythms of the land rather than solely following commercial demand. We also prioritize responsibly grown fruits and vegetables, thereby reducing dependence on imported products and supporting the local economy.

REDUCING FOOD WASTE: FULL USE AND CONSCIOUSNESS IN EVERY PLATE

In our kitchen, nothing is wasted. We give new life to underutilized parts of vegetables: we use the peels to make homemade jams, the stems are transformed into a tasty green sauce, and the roots are featured in some of our most popular dishes. We utilize every ingredient to the fullest, respecting its nutritional and culinary value. We also manage our inventory with daily precision to prevent food spoilage. Leftovers and vegetable scraps are reused for broths or composted, thus closing the cycle with responsibility and creativity.

ENERGY EFFICIENCY AND RESPONSIBLE USE OF WATER

Our commitment to the planet is also reflected in the way we manage natural resources. We use energy-efficient appliances (such as those certified with Energy Star) and implement water-saving systems like efficient faucets and smart drains. For cleaning our ingredients, we use pure water from Madrid, avoiding the use of harsh chemicals. Thanks to large floor-to-ceiling windows, we maximize natural light, thus reducing the need for artificial lighting. Good ventilation and insulation complete our approach to a more sustainable and energy-conscious operation.

REDUCTION OF PLASTICS AND SINGLE-USE PACKAGING

In our sustainable philosophy, we minimize the use of plastics and disposable materials. In the restaurant you will not find plastic bottles, single-use cutlery, paper napkins or disposable cups. We opt for biodegradable or reusable containers for take-away orders, although we try to avoid delivery service as much as possible. In the salon, all utensils are made of glass, porcelain or other durable materials. In addition, we have replaced water bottles with filtered fountains or glass containers, offering a more responsible and environmentally friendly experience.
